graham "crack"er Bars

August 28, 2023

After doing a search on Pinterest, I think that these bars are technically what you would call "pralines", but without any toffee or extra stuff. I just wanted to put down in writing the recipe for this sweet treat that my dad used to make for us on random occasions when we were little! I never really asked how he did it until just the other day, and decided to try it for myself. It tasted pretty much exactly how I remember it!

There aren't really any substitutions for this recipe, more just how you want to go about melting the butter and sugar together and how you want to pour it over the graham crackers.

When I made these, I cut a stick of butter up into cubes to melt in the microwave in 10-second intervals for about 30-40 seconds, then I whisked in the brown sugar. I just poured the mixture in big splotches all over the graham crackers, and then used the back of the spoon to spread it around as evenly as I could. "Evenly" would have been better achieved if I had used a spatula, like my husband suggested, but the spoon worked well enough. It's kind of like putting sauce on a pizza in that you will have a "crust" around the edges where you didn't quite spread the mixture all the way (unless you're a wizard and enjoy getting your hands all sticky). I let mine sit for about an hour before we did our family home evening lesson and they were good to go!

Also, I used just about two bags of graham crackers (the Great Value kind from Walmart) and broke them in half along the perforation. That filled up a whole cookie sheet pretty much perfectly!

RECIPE

Ingredients

  • two bags graham crackers
  • 1 stick (1/2 cup) butter
  • 1 cup brown sugar

Instructions

  1. Break graham crackers in half along perforation and line up on a baking sheets. (You probably won't use the entire second bag.)
  2. Melt the stick of butter in the microwave (I find it's best to cut the butter into small chunks and microwave in intervals)
  3. Add the brown sugar to the melted butter and whisk together until smooth.
  4. Pour mixture over graham crackers, spreading out evenly with a spatula or the back of a spoon. Let cool and settle for about 1 hour before serving.
